When caramelized, coconut cream is known as latík, a rich syrup used to sweeten native Filipino delicacies, like kalamay, a sticky dessert made with glutinous rice flour, coconut milk, and brown sugar. Latík can also be used in a more solid form, or as toasted crumbs that add sweetness as well as texture.
